Ok, I'll admit right up front, I did not buy these for the purpose of cutting Sushi. I have tried Sushi, I WANT to LOVE Sushi. I just don't. That being said what I did need was a nice sharp set of knives. I have been using the same knife set I got at my wedding 21 years ago. Those babies needed to go. I was so excited to get these and ripped eight into the packaging to get to them. The first thing I noticed is that the handles are much lighter than the ones in the photo, no big deal to me, just a note. These knives fit well in the hand and seem balanced and have a nice weight to them. They are super sharp and I have used the to cut everything but Sushi with absolutely no problem. The one thing I am going to do is to coat the wooden handles in polyurethane to preserve the wood better. Aside from that, completely happy with the whole set!
