When I purchased this tea the company sent me a message explaining the grades of tea and that this is an eco class of tea. They said this is better utilized in baking. I disagree! This tea tastes so much better than a more expensive brand I have here at home. This tea is not bitter, smooth and mixes really well. there is no excessive stirring to make it dissolve, it mixes right in with the water. I have drunk this both hot and cold and love it. Matcha can be an acquired taste, it is earthy almost like freshly cut grass. Not everyone likes it but they should give it a chance. The health benefits are out of this world! This has so many antioxidants in it and it is supposed to speed up metabolism which is NEVER a bad thing. I received this for free or at a discount in exchange for an honest review. I test and scrutinize products I review to the best of my ability, in order to help you make an informed decision. My loyalty is to fellow buyers above all, so I post reviews for all products received for free or at a discount, even if they are less than positive. If anything should change in my opinion of the product, I will update it so that you have the most up to date information. Please feel free to ask any questions. http://www.amazon.com/Midori-Spring-Class-Culinary-Matcha/dp/B01ACE1JOO/ref=sr_1_1?ie=UTF8&qid=1455814826&sr=8-1&keywords=japanese+matcha+green+tea+powder&tag=lftomoson-20 #midorispring
